Caramelized Onion and Goat Cheese Pizza Print I was inspired recently to take my favorite quick-and-easy pizza crust recipe and create this caramelized onion and goat cheese pizza! Truly- these little pizzas my new dinner obsession! Author: MomOf6 Ingredients For the Pizza Crusts: One package of yeast 1 cup of warm water ¼ cup olive oil 2½ cups of all-purpose unbleached flour (plus a bit more if the dough is sticky) 1 teaspoon of salt For the Caramelized Onions: One large yellow onion, sliced into rings ¼ cup of butter 1 cup of Chardonnay, divided For the Pizzas: Sea salt Fresh rosemary Goat cheese (Montchevre is my favorite), cut into ½" pieces Instructions Prepare the Pizza Crusts: Preheat the oven to 400°. In a large bowl mix the yeast into the warm water until the yeast is dissolved. Stir in the olive oil, flour, and salt until the dough becomes a ball. Add a little more flour if you find that your dough is too sticky. Cover the bowl with a kitchen towel and allow it to sit on your stovetop while the oven is warming up, for 15 minutes. (Note: this dough will not really rise- and that's fine!) Divide the dough into 6 pieces. Line two large baking sheets with parchment paper or nonstick foil, spread out the dough until it is very thin. I like to use a rolling pin in order to make it nice and round and very thin. Bake in your preheated oven for 7 to 9 minutes until the crusts are set but not brown. Caramelize the Onions: Melt the butter in a large skillet on the stove and add in the onions. Pour ½ cup of Chardonnay and allow it to simmer until most of the liquid has evaporated. Add the remaining ½ cup of Chardonnay and continue to cook until the onions become syrupy and golden and the liquid has evaporated. Set aside to cool. Prepare the Pizzas: Brush the pizza crusts with olive oil and sprinkle with sea salt and fresh rosemary. Add your caramelized onions and the goat cheese. Bake in the 400° oven for 12 to 14 minutes until the cheese is starting to melt and the crusts are golden brown. 3.5.3251
